ABOUT THIS COFFEE
Don Neftali Fajardo, has been farming coffee for more than 35 years in a village called La Estrella near the town of Inza, Cauca, Colombia. He has planted several varieties of arabica on his four hectare farm: Castillo, Caturra, Typica Colombia. Once harvested, the coffee is washed and fermented 24 hours then dried in the sun or on raised beds.
Coffee is produced in 29 municipalities in the Cauca department of Colombia at altitudes between 1,700 and 2,100 meters above sea level. Cauca has volcanic soils that provide excellent conditions for coffee production. Coffees from this region have unique cup profiles and flavor notes and are often recognized as some of the best in Colombia.
Cauca has historically been one of the hardest hit by the Colombian armed conflict, with the constant presence of guerrilla groups. This situation made coffee exports from the region difficult for many years. More recently the situation has improved and coffee production has increased. Access to international markets is increasing and efforts to improve bean quality is becoming a main focus for small farmers. Coffee production is very dynamic in this region, and we look forward to the continued development of specialty options in the future from producers in this part of Colombia.
